Mixology-minded bars are not quite ubiquitous on the Las Vegas Strip yet, though they're certainly more easy to find than ever. Still, Fusion bar at the Palazzo stands out, perhaps because it is so unlikely. Plopped down in the middle of the casino floor, this circular bar gives little indication of the quality libations that mixologist Wendy Hodges and her crew turn out.

Originals like the celery-based Conductor's Stick (with Chopin vodka, Laphroig scotch, muddled celery), the Day Spa (Hendrick's gin, cucumber and lavender bitters) and Spirited Amber are deceptively complex and sophisticated.

Fusion Bloody Mary

The Bloody Mary, built on a secret recipe served only here, using Tru Organic Vodka infused with five different peppers, and olives stuffed with Slim Jims and blue cheese, is a category killer. Thanks for playing, folks. We have a winner.

It may not have the majesty of Vesper bar, or romance of The Chandelier at Cosmopolitan, but it does have one thing they don't: gaming screens. Which means, load a $20 in the machine in front of you, and as long as you're thinking about betting it, they will comp your drinks.  Classy cheapskates, do I make myself clear?
